In the Suisse Romande, otherwise know as the French-speaking part of Switzerland, there is an original take on coffee and steamed milk. Hint: it may have to do with all that delicious Swiss milk originating from it’s alpine pastures.
A café renversé is the typical coffee or expresso with steamed milk but in reverse. The milk is the star. The Swiss after all drink on average 70 litres of milk each year. You can find renversés in cafés, restaurants and even McDonalds and Starbucks throughout the Suisse Romande. They are very popular and ordered in place of café au lait, American style latte or Australian flat white. See the difference!
A renversé starts with 60% milk and then 40% of coffee is added. It’s also traditionally served in a glass mug. There is never need to worry about calcium deficiency en Suisse!
